Loukoumades (Greek Doughnuts)

Ingredients:
½ kilo of rising flour
½ wine glass of lemon juice
½ wine glass of orange juice
A little salt
1 ½ cup of water
For the syrup:
4 cups of sugar
2 cups of water
2 spoonfuls of honey
1 cinnamon stick

 

Instructions:
First prepare the syrup. Boil it for 10 minutes and let it get cold. In a large bowl, mix the flour with the salt and then add the juice and the water and mix them till they become a thick porridge. Heat the oil in a deep pot. Dip your left hand in the porridge and by using a wet teaspoon, get as much porridge as it comes out from between your thumb and your index finger, when you close your hand in a punch. Put it in the hot oil. Fry them until they get browned. Remove the doughnuts from the pan by using a slotted ladle and serve them in dishes. Sprinkle them, if you want, with cinnamon and ground walnut pith. If you don’t want to prepare the syrup, you can also sprinkle them with some honey.

In a pot, we put the oil and the semolina and mix them continuously in a medium temperature  until the mixture is curdy enough. As soon as this cream is cold, we beat the eggs and add them to the cream. Then we add the  grated cheese and the pepper. We fry the peppers for a while and then remove their seeds and cut them in small pieces. We sauté the butter and the sliced tomatoes.

Mizithra Cheese Pie

Cut the cheese into small pieces and add the honey, sugar, eggs and mix the mixture until it becomes fluffy. Cover an oblong Pyrex with butter and flour and pour the mixture inside. Bake for half an hour at 180 degrees until it gets golden brown. Let it cool, sprinkle with cinnamon or rosewater.
