Potatoes in Oven with Shrimps

Ingredients:
1 kilo potatoes
½ kilo of shrimp
1 cup grated soy cheese
1 cup tahini oil
1 dry onion
2 tomatoes
Juice of 2 lemons
1 tablespoon flour
1 tablespoon cornflour
2 teaspoons mustard
Oregano, green pepper

Instructions:
Peel the potatoes, cut them into thin slices and spread in the pan. Pour the tahini oil on the potatoes, along with dry chopped onion, oregano, green pepper and a little mustard. Put them all together and mix well. Pour a little lemon and put the food in moderate oven to bake approximately for 50 minutes. During baking, cut ripe tomatoes in slices and when the food is cooked, remove from oven and spread over the slices of the tomatoes. Also, grate soy cheese and pour on top of the tomatoes. Put the pan again in the oven for another ten minutes to brown. Take out of the oven and serve. Meanwhile, boil the shrimps in little water. Take their juice and strain. Add a little flour, a little cornflour, a little mustard, pepper, lemon and boil it. All these ingredients together create a nice white sauce like mayonnaise. Add some chopped parsley. Place the shrimps on the potatoes (3-4 shrimps each dish) and pour over the white sauce.

We peel the potatoes and boil them to become soft. We strain and melt them in the puree mill. We put them in a big bowl with the rest of the vegetables ( except for the flour) and mix them well. We put the mixture in the fridge for half an hour to become harder. We shape the croquettes, flour and fry them in hot oil, until they become browned and crunchy.

Holy Monastery Grigoriou: the monastery dedicated to Saint Nikolaos

Holy Monastery Grigoriou: the monastery dedicated to Saint Nikolaos

The Holy Monastery Grigoriou was founded in the period 1310-1314 by Saint Gregory the younger (December 7), the so-called hesychast and silent man. The Monastery is contemporary with the Holy Monasteries Dionysiou and Pantokrator, however, not much information is preserved about the activity of the Monastery during the first centuries. According to historical sources, Saint Gregory was a student of Saint Gregory of Sinai and lived in the Skete of Magoulas. Over time and as his spiritual children grew, Gregory decided to descend lower and build the Monastery in its current location.
