Sfugato

Ingredients:
1kg potatoes
½ cup grated feta cheese
½ cup milk
8 eggs
Salt, pepper, oregano

Instructions:
Peel and cut potatoes for frying. Fry them in medium heat oil. Pull them out and spread in pan. Pour the cheese, salt, pepper, oregano and stir gently. Spread evenly in the pan again. Beat eggs with milk and a little salt and pepper. Pour the mixture into the pan and bake in moderate oven until it rises and become lightly browned.

We wash the cauliflower, cut it in pieces and throw awy the thick stalks. We peel the potatoes, cut them and boil them with the cauliflower for 20 – 25 minutes. We keep ½ litre of  the boiled water and melt the rest of the vegetables. We add some salt, pepper and nutmeg. In a pot, we melt the butter, we add the flour and let the mixture become “golden”.

Potatoes in Oven with Shrimps

Peel the potatoes, cut them into thin slices and spread in the pan. Pour the tahini oil on the potatoes, along with dry chopped onion, oregano, green pepper and a little mustard. Put them all together and mix well. Pour a little lemon and put the food in moderate oven to bake approximately for 50 minutes. During baking, cut ripe tomatoes in slices and when the food is cooked, remove from oven and spread over the slices of the tomatoes. Also, grate soy cheese and pour on top of the tomatoes. Put the pan again in the oven for another ten minutes to brown.

Holy Monastery of Dionysios: the imposing Monastery of Saint John the Forerunner and Virgin Mary of Akathist

The Dionysios Monastery was built in the 14th century and its founder was Saint Dionysios from Korysos in Kastoria. The construction of the monastery was a laborious process for Dionysios, as there were no financial resources and means for building. In the effort of Dionysios, a great supporter and sponsor was Alexios III Komnenos, Emperor of Trebizond, motivated also by the Metropolitan of the city Theodosios, who was a fellow brother of Dionysios. Donations to the Monastery were later continued by the Emperors Palaiologos, as well as by many leaders of Moldavia. Saint Dionysios completed the construction of the Monastery in 1380 and gave it his name.
